Wittman was born as Zeta Collins in Gilmore City, Iowa, USA, on 15 June 1900. She was the second child of Joseph and Catherine Collins. After graduating from Tobin College at the age of 17, she became a teacher and worked in a one-room school. She married Howard Wittman in 1925 and had three children together: Nelson, Charles and Zeta. Before settling in Hobart in 1945, the family lived in Dayton, Ohio, Paris, Texas, and Gary, Indiana. Howard died in 1976.

Wittman stopped driving at the age of 93. When she was 103 years old, she wrote a book for her family titled My First Hundred Years, about her experiences throughout the 20th century. That same year, she moved in with her daughter Zeta and her son-in-law.
