Pascottini was born on 18 January 1910 in Toronto, Ontario, Canada, as the fourth of eight children. Her father was Frankie Caprise. She started working at a cotton mill when she was ten years old; along with her seven siblings, she had to start working at a young age to help support the family financially. She spent the next 50 years of her life working in textiles. She never learned to read or drive.
On 7 June 1931, Pascottini married Umberto Pascottini, who had immigrated to Canada from Italy in the 1920s. They had two children, Elizabeth and Marianna. Health complications during her first birth led the doctors to tell Pascottini that she could not have any more children, but in 1943, she gave birth to Marianna. The doctors gave Umberto a choice: save his wife, or save the baby. Although she was in bad shape after giving birth to Marianna, both survived.
Pascottini's husband died at the age of 98. Following his death, she moved to live with her daughter in Grassie, Ontario. However, she lived in a retirement home in Beamsville, Ontario. Pascottini was a member of the Lakemount Church community. She celebrated her 110th birthday in January 2020.
Pascottini died in Beamsville, Ontario, Canada on 8 September 2020 at the age of 110 years, 234 days.
