Pascottini was born in Toronto, Ontario, Canada, on 18 January 1910, as the fourth of eight children. Her father was Frankie Caprise. She started working when she was 10 years old. Along with her 7 siblings, she had to start working at a young age to help support the family financially. Pascottini went to work at a cotton mill. She’d spend about 50 years working in textiles.
On 7 June 1931, she married Umberto Pascottini. Her husband worked at the Arma dei Carabinieri police agency in Italy and had come to Canada in the 1920s. They had 2 children, Elizabeth and Marianna Felvus. Health complications during her first birth led the doctors to tell Josephine and Umberto they couldn’t have more children, but in 1943, she gave birth to Marianna. The doctors gave Umberto a choice: save his wife, or save the baby. Although she was in bad shape after giving birth to Marianna, both survived. She never drove or learned to read. Her husband died at the age of 98. Following his death, Pascottini came to live with her daughter in Grassie, Ontario.
Pascottini is still a member of the Lakemount Church community. She celebrated her 110th birthday in January 2020.
Pascottini currently lives in the Albright Manor, Beamsville, Ontario, Canada, at the age of 110 years, 41 days.
